1.Open-faced mashed chickpea and avocado sandwich.

Gluten-free sourdough toasted and topped with avocado mashed in salt and pepper, chickpeas mixed with vegan Jalapeno & thyme cashew cheese spread, scallion and Fresno chilis.

2. White bean and pesto toast made with vegan creamy, kale and cashew pesto, mixed together some white beans with the pesto and spread it on some toasted bread with a little bit of fresh basil on top. This can be served over a salad in a collard wrap or over rice.

3. Avocado toast using mashed on whole wheat sourdough with beet hummus, cherry tomatoes, basil, poached egg and dill.

4. Sushi inspired spicy tuna toast, made with gluten-free sourdough from the farmer’s market and topped with mashed avocado with wasabi salt, sliced cucumber, canned tuna mixed with garlic aioli and sriracha and topped with scallion and sesame seeds.

5. Roasted cherry tomato avocado toast on sourdough with za’atar. To make roasted tomatoes, spread on a baking sheet and drizzle with olive oil, bake for 20 mins at 425.

6.Roasted broccoli toast with chive cream cheese on toasted sourdough along with poached egg, fresh parsley and bagel seasoning.
